By day I am a lowly telecom rep, workin' for the weekend along with the rest of the underprivileged world. But after work I am Dixie Kicks, a proud member of the Wicked Pissahs and the Boston Massacre roller derby teams. When I am not wearing skates, you can find me cooking up a vegan storm in the kitchen, daydreaming of North Carolina (my home, sweet home), petting my cats, planning my next adventure, looking for great vintage finds at thrift stores, spending lots of time with my boyfriend, and planning craft projects that will never be started and/or completed.

Coolest Chicke Coop Ever →

OK, I might be a little obsessed with having chickens…and I DON’T KNOW WHY! I just want to move to the back country in the Tennessee mountains and have chickens and grow my own food and be a hippie. Is that too much to ask?

I made more olive and lentil burgers on Wednesday night because they were SO good! This time I froze half of them to consume later. I also didn’t have enough lentils, so I sub’d sauteed kale and it seemed to work perfectly! I had one last night and it was delish-per usual! Yum!

I’ve been struggling trying to do a particular balancing exercise in the gym lately. I can do it perfectly on my left leg, probably for hours if I wanted. But when I switch to my right leg, it takes a really, really long time to balance and then I inevitably almost fall down several times. WHY???!!! I have spent a long time trying to figure out why my right leg is my new bum leg…then today it hit me (not my leg, um, the reason): DERBY!! My left leg does all the work and we only skate in one direction, so those muscles are all pumped up and ready to go, while my right leg is still confused and sad and left in the dust. I’ll have to figure out some separate balancing exercises to do to try to strengthen the little guy. We’ll see…

Vanilla sugar: cut up a few vanilla beans, throw them in a mason jar with some sugar and voila! Great for sweets or baking (I saw this on Pinterest, of course). I’m not sure exactly what I’ll use mine for, but I love vanilla, so I’ll find something to do with it!

For dinner tonight, I made Miso Soba Stir Fry with Greens and it was pretty delish. I added the Orange Ginger Tofu that I made the other day and it was surprisingly flavorful (sometimes tofu doesn’t hold the flavor that I think it should, but that recipe definitely did not disappoint me!). The best thing about this dish is that it was SO easy to make, especially since soba noodles only take about 5 minutes to cook. I added kale and green beans to up the veggie factor. Yum!
