By day I am a lowly telecom rep, workin' for the weekend along with the rest of the underprivileged world. But after work I am Dixie Kicks, a proud member of the Wicked Pissahs and the Boston Massacre roller derby teams. When I am not wearing skates, you can find me cooking up a vegan storm in the kitchen, daydreaming of North Carolina (my home, sweet home), petting my cats, planning my next adventure, looking for great vintage finds at thrift stores, spending lots of time with my boyfriend, and planning craft projects that will never be started and/or completed.

Epic Meal Time

I just got finished spending 6 hours in the kitchen! Sigh. I LOVE being in the kitchen. That is definitely my happy place…but now I’m tired and it’s bed time. Boo. I mean, yay for being tired at bed time, but boo for it being bed time and the end of my sweet, sweet weekend. Anyways, I have a busy week ahead of me, so I needed to prepare some healthy, tasty meals for my future lunches and dinners.

This afternoon/evening I made:

Roasted Fennel and Potato Soup —I had never had roasted fennel before. It turns out that it is delicious! I will definitely be purchasing more fennel bulbs! The soup was good, but a little too onion-y for me (I’m an avid onion-hater!). Next time I’ll add more fennel and less onion. I also meant to buy some soy “bacon” bits, which would have been delicious, but I forgot. I served it with some Daiya cheese (ha! After I said I didn’t eat much of those fake cheeses!) and some sprigs from the green, leafy part of the fennel. It was great, but crazy-filling!

Orange and ginger baked tofu—I will combine with Asian noodles and veggies later this week. I tried one of the pieces of tofu and it was great! I tasted like a delicious version of restaurant-style tofu. Whoa!

Olive and Lentil burgers—I made these because they looked easy, but they came out amazingly! The flavor is outrageous! I would recommend these to anyone (carnivore or veg!). They’re pretty simple and they are also low fat and full of veggies, so they are GOOD FOR YOU!!!

Homemade potato chips— my potatoes were on their last leg, so the ones that didn’t make it into the soup were turned into chips.

Chocolate pumpkin loaf— I just gotta have something sweet after a meal! I actually made this in muffin tins and silicone muffin molds. My oven is evil (it changes temperature very often because it is cheap and older than I am and I have to monitor the temperature all the time) and I got distracted with everything else and forgot to check on them, so most of them got burned. Once you scrape off the burnt part, though, they’re pretty delicious! AND low fat (a bunch of sugar, though. They aren’t exactly the healthiest thing in the world, BUT still better than most things and they taste f-ing good!). I added walnuts and pecans to mine. Mmmmmm Mmm!

Green smoothies — I made a double batch and threw in some kiwis, blueberries and apple sauce. I froze 1/2 of it and will drink the other half this week.

Wow, I guess that’s it. It seemed like I made SO much more than that since I was working for so long. I did have to do, like, 10,000 dishes, so that definitely added to my work time. I can’t wait to eat yummy food all week, particularly those olive burgers!! YUM!!!! Happy end-of-the-weekend!
